Ingredients:
Corned beef brisket
Cabbage, cut into 1" chunks
Baby carrots
Red potatoes, halved
Red onion, roughly chopped
Water, as needed
Salt and ground pepper, to taste
1 tbsp cornstarch per cup of liquid
Directions:
Step 1:
Place the corned beef brisket, fat side up, in a Dutch oven and add water. Season generously with salt and ground black pepper, then add the red onion. Cover with a lid and cook for one hour per pound, ensuring it doesn't dry out. Check the doneness by poking it with a fork. In the meantime, prepare your vegetables.

Step 2
Once the meat is fork-tender, add the baby carrots and the halved red potatoes, then put the lid back on. Let it cook for a few minutes. When the carrots and potatoes are done, add the cabbage to the pot, and let eberything cook for five to ten minutes. Serve and enjoy.
