I've got fond memories of munching on these cookies as a kid. They'd always come in these vibrant colors, but these pastel ones? Totally new to me. Give me the pink ones any day – I can't get enough! Meringue Cookies Ingredients:
4 oz egg white
3/4 cups sugar
1/4 teaspoon vanilla extract
Food coloring:
1 drop red
1 drop golden yellow
1 drop mint green
1 drop navy blue
How To Make Meringue Cookies:
Step 1:
Combine egg whites, sugar, and vanilla extract in a heat-proof bowl. Mix until well blended.
Step 2:
Set the bowl over a pot of boiling water, whisking constantly until it reaches 113°F. Remove from heat.
Step 3:
Using a hand mixer, beat the mixture on high speed until thick. If the tip is slightly bent when lifted, reduce speed to medium/low and let it stabilize for 1 to 2 minutes.

Step 4:
Divide the meringue into 4 and place them in each bowl. Add a drop of food coloring on each bowl. One color per bowl. Mix well.
Step 5:
Put equal parts of each color in a piping bag with a pod. Line a baking sheet with parchment paper. Use a sugar powder and circular cutter to determine the size and position on the parchment paper. Squeeze the meringue to size.

Step 6:
Place in the 185F to 194F preheated oven and bake for 2 hours. Once done, cool them completely in a dry environment.
