Ingredients For Mini Lemon Cupcakes:
¼ cup or ½ stick of butter, softened
½ cup of granulated sugar
½ cup of milk
1 large egg
1 tbsp of lemon juice
1 tbsp of lemon zest
1 cup of all-purpose flour
½ tsp of baking powder
¼ tsp of baking soda
1 tsp of vanilla extract

Step 1:
In a large bowl, cream the softened butter until smooth. Add the granulated sugar and mix well.
Step 2:
Add the egg and continue mixing until the sugar is fully dissolved. Stir in the lemon zest, then pour in the milk followed by the sifted flour.
Step 3:
Incorporate the baking powder and baking soda into the mixture, mixing thoroughly. Add the lemon juice and vanilla extract, and continue to blend.
Step 4:
Scrape down the sides of the bowl with a spatula, ensuring everything is well combined. Line a cupcake pan with liners, fill each about ¾ full, and preheat the oven to 350°F (175°C).
Step 5:
Bake for 11 to 13 minutes or until a toothpick inserted into the center comes out clean. Once baked, pipe with your desired frosting, and serve up these delightful treats. Enjoy!
