Step 1
Preheat your oven to 400°F, then grease a muffin pan with nonstick cooking spray, and set it aside. Place the thawed potatoes in a plate or bowl lined with paper towels, then press them down with more paper towels to dry or use a salad spinner instead.
Step 2
Place the potatoes in a large bowl, then add the parmesan, salt, pepper, and melted butter, and toss everything until well combined. Scoop the potato mixture into the prepared muffin pan equally, then press them down the bottom and sides to form a cup, and place them in the preheated oven.
Step 3
Allow them to bake for about 20 minutes or until golden brown and crispy, then while waiting, prepare the rest of the ingredients. In a mixing bowl, whisk together the eggs and milk until combined, then season them with salt and pepper, and set them aside. Remove the hash brown potatoes from the oven once done baking, then fill each cup with pepper jack cheese, and pour in the egg mixture equally to each cup.
Step 4
Top them with the remaining cheese, then place them in the oven, and bake them for about 15 minutes or until the eggs are set. Once done baking, garnish them with green onion, then let them cool for about 5 minutes, and serve hot. Enjoy!
