Ingredients:
3 chicken breasts
1 small onion, chopped
1 jalapeno, chopped
1 red bell pepper
1 green bell pepper
2 garlic cloves, minced
1 lb white beans
1 (15 oz) black beans, drained (optional)
1 (15 oz) kidney beans, drained (optional)
1 (15 oz) can diced tomatoes
1 (8 oz) can tomato sauce
1 cup cooking wine
1/4 tsp salt
1/4 tsp ground black pepper
1/2 tsp cumin
1 – 2 tbsp cinnamon
1/4 cup unsweetened chocolate, grated finely
1 – 2 tbsp chili powder, to taste
1/4 tsp cayenne pepper, to taste
Sour cream, for topping (optional)
Shredded cheese, (optional)
Directions:
Step 1:
Heat that oven up to a toasty 350 degrees F. Rub those chicken breasts with a bit of olive oil, sprinkle on some poultry seasoning and salt, then toss them in the oven for 30 to 40 minutes. While those babies are cooking, chop up your veggies. In a heavy-bottomed pot, add 2 tbsp olive oil, toss in the chopped onion, and sauté for a minute. Throw in the minced garlic, sauté for another 30 seconds, then add the bell peppers. Sauté until they're soft, season with 1/4 tsp cayenne pepper, 1/2 tsp cumin, and 2 tbsp cinnamon. Mix it all up. Once the chicken is done, chop it into bite-size pieces and toss it into the pot. Mix it all together.

Step 2
Next, add the canned tomato sauce and diced tomatoes. Mix until well incorporated. Then, add 1 cup of cooking wine and 1 lb white beans. Stir well, then add 2 tbsp chili powder. Cook covered until the beans are soft, about two hours, stirring every 20 minutes. After two hours, stir in 1/4 cup unsweetened chocolate. Serve with some sour cream. Enjoy!
