Ingredients:
Cinnamon Sugar Mixture:
1/2 cup + 2 tbsp dark brown sugar
1/2 cup all-purpose flour
1/4 tsp salt
2 tsp ground cinnamon
1/2 cup walnuts (or pecans), finely chopped
1/4 cup cold butter, melted
Muffin Batter:
2 cups all-purpose flour
3/4 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1 large egg
1 cup whole milk
1/4 cup vegetable oil
1 tsp vanilla extract
Vanilla Glaze:
3/4 cup confectioner’s sugar
1 1/2 tbsp whole milk
1/2 tsp vanilla extract
Directions:
Step 1:
Grab a 12-cup muffin tray, throw in those paper liners, and set it aside. Now, in a big bowl, mix up 1/2 cup + 2 tbsp dark brown sugar, 1/2 cup all-purpose flour, 2 tsp ground cinnamon, 1/4 tsp salt, and 1/2 cup finely chopped walnuts. Give it a good mix, then toss in 1/4 cup melted cold butter. Set this flavor bomb aside. Moving on to the muffin batter – in another bowl, whisk together 2 cups all-purpose flour, 3/4 cup granulated sugar, 1 tbsp baking powder, and 1/2 tsp salt. Now, create a well in the center and pour in 1/4 cup vegetable oil, 1 large egg, 1 cup whole milk, and 1 tsp vanilla extract. Stir it all up until it's one big happy mixture.

Step 2
Now, add a generous tablespoon of the batter mixture into each cup of your muffin tray. After this, sprinkle a tablespoon of the cinnamon mixture, then divide the remaining batter between the paper liners. Top each with the remaining cinnamon mixture. Once done, let the tray sit for 20 minutes while preheating the oven to 400 degrees F. After 20 minutes, put the tray in the oven and bake the muffins for 20 to 25 minutes. In the meantime, make the vanilla glaze.

Step 3
Combine 3/4 cup confectioner’s sugar, 1 1/2 tbsp whole milk, and 1/2 tsp vanilla extract in a small bowl. Whisk together until fully combined. Drizzle this over the muffins, then serve.
