When the guest list is long for your summer bbq, you need to find recipes that will feed a crowd. This corn on the cob recipe more than fits the bill, is super easy to pull together, and of course, features a summertime favorite that will please everyone in attendance. It’s called “corn in a cooler” or “redneck cooler corn” and people are swearing by it.
Donald Boling posted the YouTube video to explain the process, noting in the description: “This video describes how to make perfect corn on the cob. No need to watch any burners or anything.” If you’re thinking, “But how?,” check out the video and gather up the following supplies: a plastic cooler, corn on the cob, three sticks of butter, salt, and three pots of boiling water.
Of course, you’ll want to begin by shucking the corn and then snapping each ear in half. Then add room temperature water to the cooler before adding all of the corn. Okay, so how do you go from this to cooked and delicious corn?
Spread the corn so that it completely covers the bottom of the cooler. Add three sticks of butter and a generous amount of salt and then add the boiling water to the cooler. Shut the lid and let it stand for 30 minutes, then drain the water. That’s it!
Your corn should now be cooked to perfection and, since it’s in an insulated cooler, with the lid on, the corn will stay hot for about two hours.
Among the many comments left on the instruction YouTube video were those who are definitely fans of this method, with one person noting: “This corn comes out perfect! Change nothing, just do as the video says.”
Another commenter, however, wondered why not just cook the corn in a “crab pot,” where “it’s ready to eat in 10 minutes… and it comes out just as good.” One commenter explained that, as the man in the video mentions, this method “frees up a couple of burners,” while another commenter noted: “Thing about that is you can overcook or even burn the corn in the pot. You have to be sure to watch it. Where as the cooler method requires no attention and will never burn.”
One person shared how the cooler corn method was perfect for tailgating, explaining: “We have done this for when we are going tailgating at a football game. We prep before the drive there, then as we are going the water salt, butter, old bay, all swish around on the drive. When you get to your parking spot, you have fresh cooked corn to eat while you’re waiting on the grill to fire up and do the other food.”
For those that were concerned that the boiling water would melt the interior of the cooler, Donald responded in the comments section, saying: “NO you won’t melt the liner or should I say the liner hasn’t ever melted on me. It’s a fun event for the kids to clean the corn and prep it.”
