Watermelon Jello
Ingredients
Whole watermelon
1 cup coconut water
5 teaspoons unflavored gelatin
Instructions
Slice your watermelon right in half, using a heavy knife. Scoop out the flesh of your watermelon, putting it into a high power blender to puree. Pour the leftover juice through a strainer and into a container. Puree the watermelon. Pour that through the strainer into the same container as the watermelon juice. Keep straining until you have about two cups of pure juice. Into a pot, combine your gelatin, coconut water, and watermelon juice. Let it sit for two minutes for the gelatin to dissolve. Turn the burner on low and whisk all the ingredients together in your pot for two solid minutes. Next, you’ll need to pour the gelatin mixture into your container – your empty watermelon. Pat out the watermelon so it’s dry before you pour in the watermelon gelatin. Let the jello sit in the fridge for 4-6 hours before serving.
