Another way to eat the banana peels is to add the peels to the blender along with the other ingredients you use to make a smoothie like coconut milk, cinnamon, etc. and you will have for yourself a delicious banana smoothie,

You can also make yourself a delicious banana curry. Start like you're making your normal potato curry, and in place of potatoes, add bananas, and don’t forget the peels.

A word of advice, it does not really matter whether you are eating a green banana or a yellow one. However, for cooking, you should go for green bananas as they have a propensity to absorb flavors better because of their starch content. The only thing to be kept in mind is that if you do decide to eat the banana peels, only buy organic bananas. Do not try to eat the peels of normal bananas as they will surely do more harm than good.
