Each summer, I make it a point to experiment with various salad recipes, and one of my recent favorites is the Mediterranean chickpea salad from Dish and Devour Recipe. The preparation was a breeze, taking no time at all. The medley of tomatoes, cucumber, garbanzo beans, olives, onion, and the delightful homemade dressing created an incredibly delicious blend! If you desire, you can also include chicken or other vegetables to enhance the flavors further. This salad is an ideal addition to potlucks or as a delightful summer side dish.
