Easy Healthy Dill Pickle Salad Recipe

Who can resist the goodness of a delectable vegetable salad? Especially one like this dill pickle salad recipe from The Domestic Geek on YouTube. Let me tell you, it's hands down the tastiest salad I've come across in a long time. I consider myself lucky for stumbling upon this gem while browsing YouTube. Here are the ingredients you'll need:
Roasted Chickpeas:
1 can (19 oz) chickpeas, drained and rinsed
1 tbsp oil
1 tsp dried dill
1 tsp garlic powder
1 tsp onion powder
1/4 tsp salt
Salad:
1/2 cup plain Greek yogurt
Juice of 1/2 lemon
1/3 cup finely chopped dill pickles
2 tbsp dill pickle brine
1/2 tsp dried dill
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp salt
2 cups finely chopped green kale
2 cups shredded green cabbage
1 cup shredded red cabbage
1 cup finely chopped cauliflower florets
1 cup finely chopped radish
2 tbsp chopped fresh dill
Here's how to prepare it:
Step 1:
Preheat your oven to 350 degrees F.
Rinse and drain 1 can of chickpeas, then transfer them to a large bowl.
Add 1 tbsp oil, 1 tsp dried dill, 1 tsp garlic powder, 1/2 tsp onion powder, and 1/4 tsp salt. Mix well, then transfer to a baking sheet.
Place the chickpeas in the preheated oven and bake for 30 minutes.
For the dressing, combine 1/2 cup of plain Greek yogurt, juice of 1/2 lemon, 1/4 cup chopped dill pickles, 2 tbsp dill pickle brine, 1/2 tsp dried dill, 1/2 tsp garlic powder, 1/4 tsp onion powder, and 1/4 tsp salt. Mix well.

Step 2
Now, it’s time to assemble the salad. Combine 2 cups of finely chopped kale, 2 cups of shredded green cabbage, 1 cup of shredded red cabbage, 1 cup of finely chopped cauliflower florets, 1 cup of finely chopped radish, and 2 tbsp chopped fresh dill in a large mixing bowl. Toss everything to combine, then pour the dressing. Once everything is well combined, transfer it to a serving plate, topped it with the roasted chickpeas, then serve.
