If I’m choosing a sweet breakfast, I always like to indulge in donuts, and my favorite flavor is blueberry.

While you might think that you have to run out to the shop to pick up a dozen donuts, your options are not as limited as you might think. While there are some independent donut shops sprouting up in cities around the country, there are also other ways to get your fix for a blueberry donut. Why not bake a batch in the oven at home? With the recipe we’re going to share with you today, you will be able to enjoy an oven-baked blueberry donut any day of the year.

If you’re worried about making a mess with this recipe, your concerns are unfounded. We’ve found the cleanest and easiest way to indulge your passion for baked blueberry donuts. You don’t have to use yeast or a deep fryer. And with a simple sugar topping, your countertop and floor won’t be drizzled in frosting.

With a mixing bowl, a mini donut pan and your preheated oven, you’ll be able to whip up a batch of oven-baked blueberry donuts in a jiffy. Now here’s what you need to get yourself started.

Prep takes about ten minutes with this recipe. And you’ll need a total of thirty minutes before you and your family can start enjoying the hot, delicious goodness that is a baked blueberry donut.

Gather the following ingredients before you start so you can save time in the kitchen:

1 egg

1 cup nonfat Greek yogurt (or substitute 3/4 cup plain yogurt)

½ tsp. vanilla extract

2-4 tbsp. milk

1 ½ cups all-purpose flour

1 tsp. baking powder

½ tsp. baking soda

½ tsp. salt

2/3 cup sugar

1 ¼ cup fresh blueberries

Nonstick cooking spray

Powdered sugar for topping to taste

Like most baking recipes, you’ll want to start by preheating your oven. Set it to 350 degrees F. While you wait, take out your mini donut pan and spray it with nonstick cooking oil.

Take your mixing bowl and add the egg, yogurt, milk, and vanilla extract. Then with a whisk, beat it all together until it is evenly combined.

Place a flash mesh strainer over the bowl and add the flour, baking powder, baking soda, salt, and sugar. Use the strainer to weed out any clumps. Now Mix the batter until it is nice and thick. Only then is it time to add the fresh blueberries. First, coat them in a sprinkling of flour. And then don’t just plop them in there! Carefully fold the blueberries into the batter.

Now it is time to get your donuts baked. Spoon a tablespoon of blueberry batter into each donut mold in the tin. The bake for 15-20 minutes or until they are golden brown on top and starting to brown on the bottom.

Allow your donuts to cool for five minutes and then sprinkle with powdered sugar and indulge!
