Few things make me as happy as a well-cooked meal that's ready to eat the moment I come home. My Crockpot is something that I use ALL the time these days to make that happen. Simple and easy and ready to eat is my kinda meal.

I came across the recipe for Mississippi Pot Roast and instantly my mouth started watering. I grew up in Mississippi, so this is something that my mother actually made quite often.
Let me be the first to tell you, this is INCREDIBLE.
Grab your keys and wallet and head to the store ASAP. You'll be glad you did!

INGREDIENTS:
1 beef roast (3-4 lbs.)
1 package dry Italian dressing mix
1 package of dry Au Jus gravy mix
1 stick of butter
5-10 peperoncini peppers
1/4 c. beef broth
DIRECTIONS:
Place your roast in a slow cooker. Pour broth over roast before seasoning. This ensures that the seasoning doesn't get washed off.
Sprinkle packages of Italian dressing mix and Au Jus mix directly over the roast.
Cut a stick of butter and place over the roast as well. Add in your peperoncini peppers around the top and sides of the roast.
Cook on LOW for 7-8 hours. If you're short on time, cook on HIGH for 3 hours and then turn to LOW for one additional hour.
